It Appears That You Can Change These Property's Back And Forth As Many Times As You Wish To. However, You Can Only Collect On 5 Of The Property's Once Every 18 Hours.

 Since All The New York Shops Have Items That Have 3 Attack And 3 Defense (or More) Attached To Them The Only Advantage To Keeping The Venetian Condo And Sports Bar Among Your 5 Chosen Shops Is That Once They Are Built You Can Build Items With The Attack And Defense Skills Attached To Them Without Needing Parts To Build Them.
